擁有兩百年歷史的貝拉西蒙酒莊，位於布根地夏布利（Chablis）的精華地帶，以嚴謹、專注的態度經營酒莊，主要種植平均為50歲的老葡萄藤。

需要細心呵護的老藤，耐心便是最大的關鍵。在種植方面，貝拉西蒙忠於反映風土表現，每年待葡萄慢慢熟成後，多次品嘗以確保果實保有鮮度，並為葡萄酒帶來圓潤集中的風格。於釀造製程上，酒莊並未被捲入現代商業經營的洪流中，堅持傳統，拒絕使用電子系統控制不鏽鋼桶來釀酒，而是依照年份狀況、風土特徵微調釀造時間，並決定是否進入橡木桶中短暫陳釀。
